Quinoa, courgette and feta salad

A superfood salad with a Greek twist, this quick and easy dish is the perfect solution for a health conscious dinner.  This serves two.

You will need

75g quinoa

1 large courgette

1 tbsp red wine vinegar

2 tbsps rapeseed oil

4 spring onions, finely sliced

100g cherry tomatoes, halved

100g feta cheese

1 red chilli, finely chopped

1tbsp chopped parsley

Method

Cook the quinoa according to the packet instructions, then rinse and drain it under cold water. Rinse and drain again.

Cut the ends off the courgette then cut into ribbons using a potato peeler. Whisk the vinegar and oil together and season. Put the rest of the ingredients in a large bowl, pour over the dressing and carefully toss everything together. Divide between two plates.
