24 Ways to Eat an Avocado

So you're wondering how to eat an avocado. Like, of course you know about the toast and you know about the guacamole. But when it comes to what to eat with avocado, there are actually a lot more things to do with the creamy, dreamy fruit than just pair it with bread or chips. In fact, dare we say it, guacamole may not even be the best way to eat an avocado. (We know, we know, but hear us out.) Here are 24 ways to prepare avocado that go beyond the usual tricks:

1. Make avocado fries.

Here's a great secret. You don't even need a fryer to make the creamiest fries of your life: Just slice up an avocado, dip the slices in a beaten egg, roll in breadcrumbs, and bake at 400 degrees until crispy.

One of avocado's great powers is to add plant-based creaminess to anything and everything. For a creamy salad dressing, put the ingredients of a basic vinaigrette (oil and vinegar) in a blender. Add chopped avocado. Blend until creamy. It never hurts to add a bunch of fresh herbs as well.

For a wholesome dessert that's also a great way to use avocados that are on their way out the door in terms of overripeness, make a chocolate mousse. Here's how to prepare avocado mousse: Combine 1 very ripe avocado, 6 semisweet ounces melted chocolate, 3 tablespoons honey, and a pinch of salt in a food processor until smooth. If you want that extra creamy, light fluffiness, whip some cream in a bowl and fold it into the avocado and chocolate mixture. 5. Fill with crab meat.

Simply blend your chickpeas, lemon juice, tahini, and olive oil in the food processor until you've reached the level of smoothness you want. Then, add some diced avocado. You can simple stir and mash your avocado in with a fork for a chunkier texture, or you can purée it until it's totally smooth and incorporated into your hummus.

Split and pit a few avocados, brush them with a little oil, slap them on a hot grill. It'll take just a minute or two until they're warm, creamy, and grill-marked—perfect for eating with that steak you just pulled off the grill, too.

16. Make a dip that's not guacamole.
