John Whaite’s 5-ingredient chorizo and chickpeas braised in cider 

In his new series from the Telegraph, chef and former Great British Bake Off winner John Whaite showcases a range of deliciously simple recipes you can create at home.

Straightforward but sure to impress, each recipe requires only five ingredients to complete – excluding kitchen essentials such as salt, pepper and oil.

Ingredients

  • 250g raw chorizo
  • 660g jar cooked chickpeas
  • 100ml good quality beef stock
  • 200ml dry cider
  • Small handful of flat leaf parsley

Method

In a large sauté pan, heat a good glug of oil over a medium heat. Chop the chorizo sausages into 5mm-thick discs and add them to the pan. Fry the chorizo, stirring occasionally, for about 5 minutes, or until cooked through and just starting to brown.

Add the chickpeas to the pan and stir to coat, then add the stock and cider. Bring to the boil, then reduce to a gentle simmer and cook slowly to reduce, until the liquid in the pan is sparse and thick. Remove from the heat and season to taste.

Roughly chop the parsley and scatter over the top to serve.

Variations: Whilst chickpeas are best for this dish, you could use some plump butter beans instead for a great taste.
